    I would never dream of not having enough time to do pour over. Life is too short. Takes 5 minutes if you have an electric kettle and an automatic burr grinder

    I switched to cold brew during the first couple of months of my daughter's life because I needed something strong and immediate, but otherwise I will always be pour over for life

    Just to add, a Chemex is so incredibly easy to clean. Rinse it out after every use and occasionally clean with a bottle brush

    Didn't make it out to the farms this trip to Panama but did grab a few bags at the Riba Smith.

    Lamastus Elida Estate - catuai honey process They were out of the narural process whole bean that I like.

    Janson - geisha natural process

    Damn it.

    I think a big reason I haven’t spent big bucks on a espresso machine is I’m afraid I’ll never produce a quality pull. Sticking to my pour overs for now and grab an espresso when I go to a coffee shop.

    For what it’s worth, chasing a good one is fun and it tasted alright. Not great but alright.

    So after months dialing in Chemex method, trying varying recipes… I’ve determined that v60 makes a superior cup & reigns supreme:

    1. V60
    2. Aeropress
    3. Chemex

    My last decaf order was from Broadsheet Coffee - they always have a pretty solid option. I’ve also had some from Little Wulf and Verve that I’ve liked in the past.

    I like Onyx Powernap - half caff / half decaf blend.

    Dump grounds into compost bin, rinse under the faucet, set it on the dishrack to dry. Whole process takes 7.4 seconds

    Tried a bunch of devices and ways and settled on this for taste and ease of cleanup:
    • 5:1 ratio of water to coffee for 20 hours in the fridge
    • Put the grounds in these bags in a mason jar/glass pitcher/storage vessel. I use a medium-coarse grind
    • When finished, just toss the bag and keep in the fridge for up to a week or so

    Clive Coffee's offering me $1000 to trade in my Profitec 300.. Tempted to upgrade it to either a Profitec 600 or Lelit Bianca. 600$ difference is a good chunk of change but it gets me a machine with rotary pump and flow control. I guess I can add flow control to Profitec 600 for 200$ or so. Decisions. Decisions.

    I have nothing. I have no frame of reference on how much this stuff costs. I know a chemex is around $40 or so. I don’t want top of the line stuff and I don’t want the cheapest stuff that will break or turn out a shitty product. I’d say mid level.

    I started off with a baratza encore, a v60 size 01, cheap small scale, and a hario gooseneck pour over stovetop kettle.

    grinder makes the biggest difference

    • Encore (electric) or jx-pro (manual) grinder
    • Bonavita variable electric gooseneck kettle
    • A cheap american weigh kitchen scale (to .1 grams)
    • A plastic v60

    Where do y’all buy your coffee? I have a Trade subscription for my drip maker, but wasn’t sure for the pour over stuff.

    I think Sump has a subscription service.

    Sometimes, direct order from roasters but that’s going down (Onyx, Sey, Black and White)

    I cancelled trade after they reduced bag sizes from 12oz to 11oz without any announcements and the curation has been lacking.
