Growing up there was a butcher that made ham sausage. It was like summer sausage but made out of ham. It was... so ridiculously good.

We sold it at a deli I worked at in high school so I tried it a few times. It was decent but I’d never buy or make it when there are so many other delicious ways to prepare ham.
I bet my wife would love it if she could get past the aesthetics. She orders cooked/tavern ham on white bread with just mayo at any deli we go to. I end up overcomplicating my order to compensate.
Put it on crackers or bread and it’s pretty much a simple ham sandwich. In general, I don’t like meat chopped like that though. Pulled bbq over chopped. Same with chicken salad, needs some chunkiness. With leftover ham, for me it’s usually pizza, ham and eggs, ham delights, fried rice, soup, and sandwiches. All seem like better use than this.

It's ok to substitute miracle whip for mayo in this sandwich combination. Just not garlic aioli or Hellmann's.

Have a butcher buddy that says the grossest thing you can buy at a deli is ham salad. I guess they most commonly use the ham that is reaching the date they need to pull it from the case, because once you start adding things like mayo in with it, it extends the life of how long they can sell the ham.
Ham cooked and glazed mixed with bread and butter pickles, celery, mayo, dash of black pepper and a little green onion. Served over rye bread. It's a Midwest thing, you wouldn't get it.
