Turkey necks are great. Esp when they're seasoned and smoked. Lot of bones but you just sort of pick around them.
Ive never had turkey necks as a prepared dish. But I always enjoy picking off the meat when using them to make stock. And that's when most of the flavor is sucked out of them.

In case you're wondering what Souse is What is souse made out of? Souse features meat from various parts of the pig, including the feet, the head, the ears, and the tail. However, various parts from cows and chickens can also be used.

You never need to apologize for not knowing something. FYI — they’re primarily a Louisiana thing. They’re significantly cheaper than seafood, so people who couldn’t afford shrimp, crabs, etc. would use them instead.
