Cauliflower Gratin With Leeks and White Cheddar ALISON ROMAN YIELD4 to 6 servings TIME1 hour Save To Recipe Box EmailShare on PinterestShare on FacebookShare on Twitter Karsten Moran for The New York Times Vegetarian, Cauliflower, Cheddar, Leek 835 ratings INGREDIENTS 1 small-ish head cauliflower (about 2 pounds), green leaves removed Olive oil, for drizzling 1 small leek, white and light green part only, very thinly sliced Kosher salt and black pepper ¾ cup heavy cream 6 ounces sharp white Cheddar, grated (about 1 1/2 cups) Email Grocery List PREPARATION Heat oven to 425 degrees. Slice cauliflower head lengthwise into 1/2-inch thick slices, including the core and leaves. (Some smaller bits will fall away: That’s fine. You’ll use them as well.) Drizzle some olive oil onto the bottom of a 2-quart baking dish. (An oval, square or rectangular dish will all work.) Layer about a third of the cauliflower along the bottom, and about a third of the leeks. Season with salt and pepper, and repeat until all of the cauliflower and leeks are used. (Don’t worry about perfectly layering them.) Season with salt and pepper and drizzle cream over. Scatter cheese on top, and season again with salt and pepper. Lightly cover with foil and place in the oven. Bake until cauliflower is nearly tender, 10 to 15 minutes. Remove foil and continue to bake until cream has thickened and reduced nearly completely and the top is golden brown and crisp, 35 to 40 minutes. Remove from oven and let cool slightly before eating.
Not losing weight but losing inches and body fat. Had to add a hole in my belt. My pants were falling. A grown man sagging isn’t a good look.
Update on vacation. Not going well. Haha it’s really hard to care what you eat or drink when relaxing by the pool, or shopping at the outlets, or going to the beach. All while being 80ish and sunny. Ah well, got 2 days left here, then back on the wagon.
2.5 lb pork butt, season however you like, cup of water, crockpot on low 7 hours, take out, add a chopped head of cabbage, put pork back in for an hour, enjoy

First attempt at Shrimp and "Grits" without a roux or without any grits. Used Tyler Florence's recipe and thickened with Xantham gum instead of flour. Made the "grits" with cauliflower. Pretty damn good for the first go round. Under 8 net grams per bowl/serving
I have this idea in my head that pimento cheese + eggs + coconut flour + baking powder in some ratio will make a cheese biscuit. Going to attempt it at some point.
i was gonna do this but make biscuits out of mozzarella and cream cheese, and then make sausage gravy using coconut flour and see how it all turned out bc i rly miss biscuits and gravy, folks
