Made some at the beach with my family last week. So, so good. Growing up in NC, it wasn’t really a thing, as far as I can recall. But when I got down to SC for college and had boiled peanuts introduced to me, whooo boy, I was hooked.
Off topic, but I love Harris Wittels. Gone way too soon. If you haven’t listened to his podcast with Scott Aukermann where he tries to get him into Phish, I highly recommend it.
Never done them in an instapot. We just straight up boiled them at the beach. Have also used a slow cooler before as well.
What I would do is kick them in the shin then poke them in the eyeballs then ask them why they took time making something so wrong

its basic but regular cape cod chips with sea salt are a classic snack. plus i have convinced myself that them being kettle cooked makes them healthy
