One of my favorite scenes in the books (that Jackson left out, asshole) was when wormtongue told the three they couldn’t bring their weapons into Theoden Kings hall. Aragorn wasn’t having it but eventually laid down Anduril, Gimli and Legolas followed and said “if this great blade shall remain outside then our weapons will be left in great company.” For me it was the first time Aragorn and the others acknowledged he wasn’t a Ranger, he was the rightful King of Gondor. Aragorn stood a while hesitating. 'It is not my will' he said, 'to put aside my sword or to deliver Anduril to the hands of any other man'. 'It is the will of Theoden' said Hama. I love the movies but I reread the trilogy this year and my lord, they’re still so much better than the movies. The scene you mentioned, the Barrow downs, the faithful soldier in Minas Tirith and his kid, I forget their names, the house of healing. And Bombadil of course.
The other thing my nerdy ass got pissed at Jackson leaving out were the Knights of Dol Amroth. I think the quote about them was something like “of the men of middle earth, only Aragorn and the Rangers were finer fighters.” IIRC, when Osgilliath fell they charged in and allowed the survivors to retreat to Minas Tirith.

I'm torn on that one. On one hand, yes please to more LOTR, but some things should just remain sacred and pure. I'm really ready for Hollywood to give up this reboot phase.
