finally getting cold enough for Ramen. gonna try and make some chashu pork ramen with those fantastic ajitama eggs, bean sprouts, mushrooms and seaweed in pork bone broth. i hear the broth portion is kind of a tedious process if you've never done it before. anyone have a go-to pork broth method?

Did shakshuka in the style of Chef John, and used hot paprika aquired for me by my main man Taques from his travels to Budapest. Also made chicken stock and beef stock in preparation for osso buco and polenta tomorrow.

My wife hurt her back on Thursday (herniated disc). She could barely walk so we had to cancel a restaurant dinner for 10 for her dad's birthday and we hosted everybody instead. I found out this was happening less than 6 hours before so I had to get everything together on the fly. I tried it sous vide for the first time this weekend. I prefer oven too. It concentrates the juices a little better and it is easier to get the caramelized edges in the oven than it is using the blow torch after sous vide. The big advantage of doing it sous vide for this was extra oven room to do 2 pans of brussel sprouts and greater margin for error since I didn't have as much prep time as I would like.
Only reason I tried it sous vide was we were cooking it in summer (eff having a 500 degree oven on in August). Spoiler T&Ps to the wife's back from a guy with a back surgery under his belt. Tell her stretching is her friend.

She called me right as I was about to get in the elevator going up to my office. I drove home to find her laying face down on our bedroom floor with our 2 year old son giving her a gentle touch on the back saying, "mommy, got owie." It was probably the cutest thing he has ever done. Fortunately our neighbor is an orthopedic surgeon and his wife stays at home but was formerly a nurse. She came over to help me and then called him and got a prescription for pain meds and got an MRI scheduled later that day. It took 15 minutes just to get my wife in to a chair. I have no idea how we would have gotten her down the stairs without the pain killers. After the MRI, our neighbor made a house call to evaluate her instead of having to go in. It is kind of awesome given the circumstances.

way overcook and then food mill the chickpeas, then food process the fuck out of it with a ton of tahina sauce (like a 50/50 ratio), some paprika/cumin/salt/whatever sounds good recipe for tahina sauce: 1 head garlic juice of 3 lemons 1½ teaspoons kosher salt 2 generous cups tehina ½ teaspoon ground cumin 1½ cups cold water blend garlic and lemon juice and let sit for 10 minutes to mellow the garlic, then add the rest and blend everything, add more lemon/salt/cumin to taste
