Thinking about doing duck breast tomorrow night for dinner. Anyone have any tips, suggestions, or recipes worth note?
I cross hatch cut it and sear it in a cast iron fat side down till it gets crispy and renders then flip till done. Can be easy to overcook so use a meat thermometer if you have one. Make sure to rest it before cutting. I always like a sweet reduction to counteract the richness of the duck so I usually go with a cherry reduction. Cherries, a little balsamic vinegar, a dash of dijon, and a little honey if needed. Lightly boil till reduced to a syrup and drizzle over. Goes well with some sort of veggie mash/puree.
First time using them as pizza toppings. Skyrocket to top 3. I usually do peppadews stuffed with goat cheese and basil as an app.
I did not bring the dough up to temp based on the recipe, I didn’t top it with enough sauce and cheese, and I let the crust get a little darker than I wanted
when I miss the mark it’s always because I put too much cheese on it and it doesn’t have time to melt perfectly before the dough is ready. I am a glutton
Yep. Trader Joe’s dough with some low moisture whole milk mozzarella, spicy Italian sausage, white onion, and peppadews. 600* on the egg for about 10 minutes.
Rainy Sunday, perfect time to get #soupszn started in the Hatfield household. Chicken noodle soup.... 9/10. Cheated a bit using a rotisserie chicken from the grocery store, but damn that makes it so easy.

Wife had her parents watch Levi last night so we could go out to dinner (mil having surgery today so we will not have that luxury again for awhile) so #soupszn was postponed a day. This is all the ingredients except minced garlic, s&p to taste, and heavy cream & cider vinegar added at end. Ready for the hate on canned green beans but it is how I have always made it since my great grandma taught me. I feel there is redemption in the 9am Monday beer.
