We got a bunch of cans from a microbrewery in Aberdyfi and have returned to our hilltop chalet to watch it. We wanted to make sure we could get up the hill before the real weather moved in this afternoon.

I had secreto cut of pork tonight for the first time ever. it was awesome. almost reminded me of the rib cap on beef. cooked medium and just delicious.
hosting another dinner party friday. probably around 12 people. Initial thought is to see if Costco still carries the racks of pork and do 2 of those, but definitely open to suggestions on food for mass-feeding.
Made my wife’s favorite meal, chicken parm, for Valentine’s dinner since we kinda celebrated with a dinner out on Saturday.
Took our super bowl carnitas and made chilaquiles. Working this AM, so didn’t make it look too nice. But it was tasty AF
Shout out to Pharm for the gluten free cake recipe. I made one version for wife's birthday and then made another version last night for vday. Huge hit. She loves chocolate cake but can never have it due to food allergies.
Sounds like you have a recipe that works, but if you want to try something else - Ive made a handful of this guy's recipes and they've all turned out really good
That guys wife has a gluten allergy. Not all the time, but he'll occasionally add subs for his recipes that cater to her
good deal. Gluten free has gotten easier and easier. Blondies are super simple and a hit too. The pre made stuff also isn’t bad these days either. I kinda wanna make some cream cheese or cool whip Lemon cookies now.
Typically do a 50/50 of parsley cilantro for chimichurri but with lamb I do 1/3 each of those and mint leaves
Golf trip down to Charleston ended up with: red snapper ceviche w/ fried skin, chorizo/mussels/clams boil w/ shrimp stock, poached shrimp w/ butter bourbon corn, lamb ribs over green chile.
I don't love parsley so I do 2 parts cilantro to 1 part mint in my chimichurri. It goes great on pretty much everything but I mainly use it on shrimp or fish.
Most of it is just arranging the ingredients but: Ceviche - Lemon, lime, mezcal, microplaned carrots, red onion, garlic, sliced green olives, and minced the fish. Mussels - Shrimp broth is what made it. Cook down the shrimp shells w/ heads for about an hour and ladle over just after adding the shellfish. Green chile - roast off tomatillos, poblanos, jalapenos, tomatoes, white onion, garlic. Add to pot with about 2 cups of water, cook down for 3 hours with some lime at the end.
2nd Dinner party was a success. 18 people. 5 racks of lamb in the sous vide + the mint chimichurri (I could drink that stuff if need be). Cauliflower rice with avocado, cilantro and lime. Fondant potatoes. Carrots roasted in orange juice and thyme (ended up stealing the show tbh). Excuse my plate I only have 16 nice ones and I made my plate last bc of carving lamb for people in the assembly line. Also was irrationally excited about my new chefs hat Spoiler
Salad on top of a sandwich seems difficult to eat. I'm gonna make some romesco sauce tonight and some very garlicy potatoes.
My first time making romesco sauce and I’d eat it on a flip flop. NY strip I had salting for 10 hours, and extra garlicky lemon paprika fingerlings.
