Grabbed stuff to make burgers tomorrow and tested one of those Oklahoma burgers that all the food influencers like to make with way too many onions. I still underestimated how many onions I would need to cook for one burger but delicious, would eat again.

Look, I live in coastal MS and there is a shit ton of redfish caught and served around here. This is the best looking redfish I've seen . They need to be serving it like this around here. Blackened redfish is great and all but it gets old after one billion times
My buddy caught a 125 lb bluefin on Thursday and brought me on some steaks. I’m also holding ~10 lbs of collar and belly in my freezer.
Fridge dump and fresh veggie meal. Made a blended tomato sauce. Mirepoix, garlic, shallot, Calabrian pepper paste, Roma and Compari tomatoes, and a little veggie stock. Simmered a bit more to reduce. Roasted lacino kale, savoy cabbage, red onion, rutabaga, parsnip, and hatch chile sausage. Sautéed a little bit of the kale as well.
Chorizo dirty rice stuffed bell peppers. Used a little of the tomato sauce above in the rice. Little hatch chile jack cheese mixed in. Extra dirty rice in the fridge.
