all-clad factory seconds sale delivered - wouldn’t notice any defect if they weren’t sold as b-stock. small notch where the handle joins the body of the 10” fry pan (i think?), pinhead-size pit on the bottom of the 3-qt saute pan and no discernable defect on its lid. well worth it for $250+ savings and kind of wish that i went for a saucier too
So I bought some of these. I'm not a great cook and was used to non-stick stuff most of my life. What is the trick to using these well without burning stuff? Lower heat? Adequate butter/oil? These are the highest regarded in the chef world but I find myself not wanting to use them.
nothing really - in my experience you dont need to change what you do or how much butter/oil you add. good fully-clad stainless pans will heat up more slowly and distribute the heat better than the average non-stick pan which are probably only disc-clad on the bottom which will scorch the sides of the food if you're not careful. they just take more effort to clean so id recommend having some barkeepers friend handy. some are technically even dishwasher safe (the two that i bought are) but i dont think ill be putting that to the test apart from being able to put stainless pans in the oven, frying, and searing things better than non-stick, its also better for things like browning butter or toasting spices because the darkness of the non-stick surface prevents you from seeing the browning clearly im trying to move away from non-stick for everything (except for my omelette pan). tired of replacing a bunch of non-stick pans every year or two and ideally I want to get my cast iron pans seasoned enough that they can do any non-stick cooking i need
I did not expect to ever see a barkeepers friend mention on TMB yet here I sit. My parents had that shit as a staple growing up.
they make a cream and spray product now which would blow the mind of 10-year-old taques (even moreso than the buildup of years of inhaling all that barkeepers friend)

Been trying to decide between buying some of these or just going with the Tramontina (sp?) version. I have a Tramontina dutch oven that I love and have heard good things about their All-Clad knockoffs. Something about the patent coming up so they can copy much of the same design?
IIRC kenji says that all-clad is marginally better at some things (more gradual and well distributed heating) but not even close to worth 3x the price - i would easily go tramontina over regular priced all-clad
I track them on camelcamelcamel etc and buy when they bottom out. I also stack williams Sonoma discounts or amazon gift cards etc when I can. I’m slowly putting together a set, but i use the 8” fry pan at least twice a day except when I am cooking for two on the 10”. At a discount I’m happy with the all clad, but when I’ve cooked with tramontina I didn’t feel like I was missing out. My wife thinks the copper core pans just “look better” on the rack. When it comes to “are they different” than other pots and pans like non-stick or cast iron, I would have to say there’s one huge difference. You’re really not supposed to take them much higher than medium on your stove. It won’t hurt the function, but it will permanently cause a rainbow haze on them. Even bar keepers friend won’t take it off. The other side of that coin is heat control, because I’ve noticed when I pull them off the heat source to keep eggs from getting over cooked etc the pan responds well. I scramble eggs and cook bacon one notch below medium and only go to medium to finish a piece of meat after a sous vide cook. The bar keepers friend comes in a cookware variety online but I haven’t seen it in stores. It has more soap surfactant than the regular version and I prefer it. The paste doesn’t do it for me...seems like it’s a lot less product for the money. I also had a handful of yeti cups my wife had used and left coffee or orange juice in. They clean up in seconds with a quick wash in that.

I have this and am very happy with it. I have a TV mounted outside that the factory speakers weren't loud enough, this worked great. I am sure there are better quality units out there but given my application and the price point it was hard to pass on.
It’s an inexpensive, good value soundbar. It sounds fine, no issues in the 2yrs it’s been in my living room. No ragrets.
Also, with all the tacos on the board and Degausser now owning stock in Toyota, we probably have enough interest for an official Toyota thread...
