Is the direwolf not coming with Arya supposed to be a sign of the direwolf changing or Arya changing? Also, isn't there basically just one main road heading to Winterfell from King's Landing? And though Jon isn't going to KL, Dragon Stone is right nearby. I don't expect it to happen on the show, but wouldn't he pass Arya on the way south?

They are analogous to each other. Both are independent doing their own things away from their perceived norms. I.E. Arya not wanting to be a princess and Nymeria not wanting to be a pet dog.
That theory would be possible if Gendry somehow ended up in Essos, and learned it. But that would be extremely difficult because there are less than 100 Valyrian steel weapons and Valyrian armor in the world, and none of them are getting reworked. Martin never hinted at that. It's much more likely Gendry returned to the Brotherhood without Banners in Westeros, has been blacksmithing with them, and will somehow play a role in the future in the north with Beric/Hound/Thoros and friends. My guess is Arya comes across him like she just came across Hot Pie.
Arya's arc is that kid who goes to college, gets out in the real world, then comes back to her hometown. Will she like what she sees? Or hate what she's become? Think that's the gist

The guy in KL could not work Valyrian Steel. Tywin had to bring a famous blacksmith from Essos to melt Ice and forge the two Valyrian swords he gave to Jamie and Joffrey
Iirc, Joffrey's sword was called Widows Bane, and I can't remember who has that now. Oathkeeper is the name of Jamie's.
I imagine forging dragon glass is a lot like forging regular glass, only with dragons as the fire source.
Spoiler ah ok, this might be a difference in the show and books I just looked it up and Tobho Mott can work Valyrian steel in the books; but on his show wiki it just says he was tortured about Gendry's whereabouts; maybe he was killed and that is why Tywin couldn't use him? not trying to argue just thought I saw that somewhere
Bran will warg into Gendry and after their bond is forged he will implant the knowledge to forge Valyrian steel into Gendry's brain and then Gendry will use his knowledge of how to forge it to then forge it, once it's forged he'll forge some more until enough is forged.

Spoiler Nymeria is the alpha of a pack she can't just abandon those she leads. My guess Nymeria and her pack will silently follow Arya and reappear to help fight along the Northerners and her brother Ghost
