I'm not too proud to admit that I'll buy and eat Blue/Gorgonzola/Roquefort/Stilton/etc. with absolutely nothing else. George likes his cheese stinky.
Washington State Creamery also makes a good extra sharp cheddar. As the cheese ages, the lactose crystalizes and gets much smoother. It being in a tin means you can store it for decades. I have two unopened tins that were made in 2004
