American cheese has its time and place. A burger is one. Queso is another.
My recipe is a simplified version of his crispy burger recipe.

I only ever eat American cheese on a burger
Bacon, pimento cheese, jalapenos, (+/- onion straws)
I also use American cheese on another American institution, the grilled cheese. (The simple version).
There's a southeast chain called Universal Joint that does this minus the onion straws. The meat's nothing special, but they have some incredible pimento cheese that is definitely the star of the burger.

Underrated cheese on a burger is muenster. Gets nice and melty.
That looks good but I prefer not having to stick my hand into a bowl of queso just to take a bite of my food.

Chez Fonfon (sister restaurant to Highlands Bar and Grill which won the 2018 James Beard most outstanding restaurant) has an amazing burger in Birmingham. Very simple, perfectly cooked and seasoned with comte cheese, charred onions and house made dijonnaise.

That's the one. That list isn't my opinion, I'd pulled it from somewhere. The only burger of those 5 that I've had is Au Cheval.
Regarding Sid's, Tucker's in OKC is probably just as good if you want an onion burger. I love that place.
I have had Au Cheval/4 Charles plenty of times and it's incredible... but would be around 4 or 5 in my nyc rankings. Brindle Room would be around 8-10.

sid's is a great visit just to say you've gone and had it, gotta get some shakes while you're there too.
the best burger in town is Nic's Diner, which is routinely on the top 10 burgers in America lists. Super small, cash only stop, gotta go early. Absolutely fantastic stuff.
Never went there when I lived in OKC, and now I'm mad.
