Just wanted to throw something on the smoke, so I picked up these little short ribs at Publix this morning. So good.
3-4 hours. I started them at 240, then moved up to 270 a couple hours in because I was getting impatient and hungry.
Ok BBQ brothers... got a work bbq lunch thing coming up next month that I am cooking brisket and sausage for. everything else on the menu is being brought in, potato salad, beans, etc 100 guests expected My general rule of thumb I have always gone by is 1/2 pound of uncooked meat per person. (total of the meats) but when you do that it would be 50 pounds total of brisket and sausage purchased to cook that doesnt feel like enough, does it? even say I went with 4 briskets at about 12 pounds a piece, plus say 3 or 4 - 3lb packs of Slovaceks sausage what say ye? for reference, I can do 8 to 10 briskets at once in the war wagon most of my experience cooking stuff like this is in the relm of a fundraiser where briskets are being donated and the question is "how many briskets CAN you do?" not so much as "how many do we need to do?"
who’s paying for the meat and is there an issue if you had some leftovers? How big of eaters? 100 guys? I feel like a brisket of that size is usually eaten by 10 people, would be tempting to 6 or 7 briskets and then 20lbs sausage?
Company is paying, it's for a client as a kick off for a $400 million project. So in reality the client is paying for it. They just will never see that number. Client is an ISD It's gunna be a mix of blue collar maintenance crews to office administrators to district superintendent Leftovers would be better than cutting it tight when I think about it, for sure. U right, I needed some people to talk it out. I'll probably go 7 briskets. It seems recently most briskets available at Sam's are either 9 pounds or 16 Might go big and get 7 big'uns and get aggressive trimming, then stock the freezer with free meat for sausage or hamburger grinding.
sounds like a plan! I’d always prefer to have too much than not enough. Will need to see plenty of pics of the feast
I just agreed to this today First got wind like a week ago, today it went from 'ohh it will be like 30 to 40 people' to around 100 I have zero concern about the quality of the cook, I mean, it's me I'm talking about here I just wanna make sure everyone is fed

I've even posted in here before . Anyway, got a new Blackstone Griddle grill, but my wife hates the idea of it. Anyone regret their decision after getting one? I've heard such good things that I still went for it despite the wife being so against it.
They do make custom griddle tops that can fit your entire range, if that’s something your interested in.
100% correct, of course you can't (easily anyway)... I tried to explain this, but she can be stubborn. It's fine, she doesn't have to use it anyway.
They make grill pans you can use on the stovetop too, but fuck all that noise for a couple reasons: it's fun to cook outdoors and get away from the people that are indoors...and you don't have to worry about smells lingering around when you cook outdoors on a grill or griddle.
