Oh, and I got on the beef cheeks late and had to resort to Sams. I don’t even know if they’d spend 1 second trimming them. Be prepared for a lot of work if you get cheeks as Sams.

I concur. The cheeks I picked up at Rudolphs are still frozen solid. Had to resort to that but now I have some in the freezer I can pull out in advance next time.

So I looked up an adapter for the BBQ Guru to work on my offsets and it involves drilling/torching and welding to make a port. This is working just fine for now. Holding temp steady like a champ. Foil to cover the vent ftw.

The price per pound is ridiculous on these. Dry aged prime. Kroger used to carry choice plates that they would cut in store and I could get them anywhere from $5.99-8.99/pound. Now they have gone to pre-packaged minis. These are not $8.99/pound...

I never see beef ribs meaty enough to smoke but I'll get them occasionally to braise.

Oh, in that case you might be referencing beef back ribs. These are short ribs. So long as you can find plates, they have loads of meat from all my experience. Or maybe I am just hashtag blessed to be living in Texas.
