I got the strip to medium rare for me, the filet to medium for my wife. It wasn't very thick so I couldn't char the hell out of it as easily and still have a good meal.

Hell yes they are. I ordered bone in loin from Sam’s and butchered a shit ton of tomahawks for the freezer. Threw the sprouts and green beans with bacon in the cast iron on the kamado joe and seared the chops. Threw them on top to bring into the house. Dinner did not suck.
I'd fuck with this. Good quality pork chops are underrated as heck and the quality looks to be there.
We had a hog butchered last year and I had them leave the pork belly uncured. It turned out better than I could've imagined. Cured a week with salt, pepper, brown sugar, red pepper flakes, and a little curing salt. Smoked to temp then put in the freezer for a bit to make slicing easier. You're gonna love it.
Yes Do you have a pizza stone? I have found its hard to keep the stone from getting so hot it burns the bottom of the pizza even with a thick heavy stone Usually could make one pizza perfect then the second would get too burnt The best I did was to light just half a chimney of charcoal then spread it into one layer evenly and put the stone on and wait 10 to 15 minutes for the stone to get up to hot enough to cook, but hopefully not too hot devine
my local butcher shop is $6.79 per pound for prime brisket and has a deal now on wagyu for $8.99 but usually is $14.99 for wagyu. So a 13 pounds packer is $88 before tax. Sounds like a rip off. I’m sure the grocery store is cheaper. How do those prices compare to what yall are seeing ?
I was messaging with the place that is $6.79 per pound for prime brisket on facebook messenger trying to figure out whether they are ripping people off or whether they just don't have access themselves to good pricing on prime brisket . When I told them what costco prices are compared to them , this was their response: "Costco is a huge distributor like Walmart..when they buy huge quantities they get better cost than us little guys!! My cost alone is over $4lb..but, I buy the best highest quality I can find!! Big companies like that can afford to run loss leaders in their ads...but they make it up with the full baskets at the register!! That’s a good price..you should stock up!!" You know going in that the local butcher shop is going to be more expensive than the grocery store or bigger markets. I just wanted to know whether they truly lacked a better priced wholesale source or were they just ripping people off. My conclusion is they just can't get brisket for cheap and they are not ripping people off on purpose. I figured that was the deal going in because they don't have buying power.

I did a pizza class at a BBQ place in town (they charge you$30-40, give you all the beer you want,s show you how to make pizza, and the let you make your own) They said to keep the temp at 450 or so, not to crank it up to 700-800. They said that the neapolitan pizza places that do that have the perfect setup, and know exactly what they are doing, and have the right dough to take that heat and be done without burning. There is much more room for error with the lower temp.
