    Dropped an 11lb prime brisket on this morning around 9. No plans on eating it today, just putting a ready to eat brisket in the freezer as my next several months are going to be busy.

    Wife just requested a fish fry for her birthday at the end of the month
    So I took that as the green light to buy that bayou classic outdoor fryer I posted about wanting a few pages back

    Gotta buy a new dehydrator too cause I went to move mine and the bottom fell out of it. Damn thing is only a hand me down from a college roommate and I graduated like 18 years ago.
    They just don't make stuff like they used to

    Smokeware sells a package with the gasket and a scraping tool. My shit was so burnt out that I just used a wire brush to clean it up.

    I was gunna lollipop em all, but wife saw something about butterfly'ing them, so I did half and half

    Bout to dip half of each in some hot sauce to finish

    Had some ribs that had to be smoked or trashed, I decided to do a small experiment, I cooked them to temp with a thermometer stuck in the thickest part. I simply left them alone (other than to brush with sauce) and waited until they hit 195.

    They were dry but edible, tasted just fine. Long story short, use feel on ribs, not temp.

    I have no idea on pellets, but I’m sure we have plenty of people that can point you in the right direction.

    Honey Hog Hot is probably the best one I’ve had if you feel like joining the Meat Church congregation.

    If you can find it locally, it's typically better than Amazon too.
    I think academy has it.
    Also call around to local bbq/kitchen stores

    My favorite thing to do with pork is a good coat of Honey Hog or Honey Hog Hot and then a light coat of Holy Voodoo on top of that.

    I use Holy Voodoo all the time in non-grilling/smoking cooking. Lots of times to jazz up a breakfast sandwich.

    Anybody tried these Philips Barbecue rubs? Became a big fan of the owner, Rasheed, on that American BBQ Showdown show on Netflix. He seems like a guy worth supporting if they're good.

    Get the 8 pack or whatever, they’re all good. I just got the refill bags. Voodoo, cow and hog I believe. I don’t care but voodoo is far and away the best. The others are good but it’s not even close.
