Doing some drumsticks I was gunna lollipop em all, but wife saw something about butterfly'ing them, so I did half and half Bout to dip half of each in some hot sauce to finish
Had some ribs that had to be smoked or trashed, I decided to do a small experiment, I cooked them to temp with a thermometer stuck in the thickest part. I simply left them alone (other than to brush with sauce) and waited until they hit 195. They were dry but edible, tasted just fine. Long story short, use feel on ribs, not temp.

If you can find it locally, it's typically better than Amazon too. I think academy has it. Also call around to local bbq/kitchen stores
My favorite thing to do with pork is a good coat of Honey Hog or Honey Hog Hot and then a light coat of Holy Voodoo on top of that.
I use Holy Voodoo all the time in non-grilling/smoking cooking. Lots of times to jazz up a breakfast sandwich.
Anybody tried these Philips Barbecue rubs? Became a big fan of the owner, Rasheed, on that American BBQ Showdown show on Netflix. He seems like a guy worth supporting if they're good.

Get the 8 pack or whatever, they’re all good. I just got the refill bags. Voodoo, cow and hog I believe. I don’t care but voodoo is far and away the best. The others are good but it’s not even close.
I’m full on Jirby at this point. A Lawry’s base, pepper next, and whatever else as an accent. It’s just so good.
