Final. Seafood paella and homemade pita bread topped with goat cheese, red chiles, & a habanero/honey balsamic reduction.
paella is one of my favorite things in the world to eat and make. those crispy bits of rice on the edges and bottom... transcendent
I suck at pizza but this is my best one yet. Really enjoyed it. I have some ideas how to make it better next time. It was kinda tough to rotate so one side was a little crispier than the other but wasn’t too big of a deal then made some honey Buffalo chicken wraps
No, it got delayed. I might be able to get you some food because he is always cooking. I would go get a drink and some app’s (scallops) at chateau AMI and dinner at Shore Longboat. Also by Shore is a place called Whitney’s. The City Pier on Pine has a good burger. My buddy plays music there Wednesday nights. Also try Blue Marlin if you haven’t.
Got to a grill store today on a BGE dealer and did some damage on accessories. Some metal skewers, jalepeno popper stand, handle light and a couple drip pans. All their stuff is easily half off any place I could find it online and its a local spot. I'd much rather support them but I just found out they were around this morning.
hey friends smoked some pork this weekend, crisped it a little ina pan, melted some cheese on top smothered in slaw, slapped it on a brioche bun.
Turkey breast and baby brisket from our cow. Any recs on the baby brisket? I was debating trying PSB style with it, but no idea if that will come off. I know if I go through the entire process it turns out to be about the size of a slice of pizza lol. Also not nearly enough fat on that, I didn’t trim it at all. Open to suggestions.
Maybe try laying it on the bed of onions/peppers at normal rec temp for PSB. Then when it gets to 190 ish and the probe slides in like butter, then slice and chop the brisket and stir it in with all the juices and stuff Then cook for just a little bit longer to let it all soak in together or reduce liquid to the point you want In other words, don't worry about pushing it till it pulls apart easy, just chop it up like a chopped brisket
Well, plan B. Fucker is so small, one call for work was all it took. Based on your post my plan was going to be to wrap it with peppers onions once it hit temp.I was going to keep it in a container to collect the juices and kind of go from there. However it was sitting 197 when I checked it. So yeah, just dumped in some brew, onions and peppers and we shall see. My guess is it's going to be rock hard. Turkey is money though. Posted before but sous vide for 3-4 hours to 146. Cool it off, ice bath for meal or just throw it in the fridge overnight. Put a little rub on it, smoke indirect until it reaches same temp you sous vide in. Takes about an hour out of an ice bath, 2 out of the fridge at 225-250.
Day off and corned beef was on sale, threw one on the smoke for a few hours, I'll end up pulling and steaming to finish. So easy and delicious.
I used the billdozer method at 375 with skin side down for about 25 mins. I still used my heat deflectors but don’t tell him that.
2 lbs 14 ozs and using a pellet Pit Boss. No clue what type of brisket it is though. My MIL gave it to us in a freezer bag when she dropped off the smoker. Figure it’s perfect for a complete rookie
Don't smoke it. Braise it in your oven if you want to enjoy it. It's too small to get a nice finished product on a smoker.
No. Just sat it on the food scale. There’s no telling what it is. She said it was a brisket but she’s also losing her marbles so there is no way to know for sure.
haha i was just messing with you. but as fish has said, don't try and smoke that. braise it or something and you'll be much happier. go to the store and get a pork butt and smoke that. it's a much better piece of meat to learn with
For pork butt? No that’s a rip off. That should be about $20. If they’re charging more for “trimming it” that’s just an even bigger rip off.
Mine doesn’t like to respect anyone’s privacy and will bust up in your bedroom when the door is shut to wake you up on a weekend so you don’t “sleep your day away”
Not going to ruin this thread but my MIL is a character. She’s referred to by everyone as “The Tornado”. If you didn’t know her you’d assume she does a ton of blow.
