Dual Monitor master race assemble. I set my wife up in a similar manner for her WFH (PC) workstation (2x24).It is nicer than her office setup which is laptop screen + 22". She has similar needs as you, lots of docs/pdf/word open. I also have dual monitor w/ dock for my home workstation (2x27). So much real estate for excel. She loves her PC workstation, but I wanted to see if her old macbook (personal device) could "dock" in too so she could run both personal and work from the same station, but I couldn't find anything when I did preliminary research on TB2 docks or TB2-USB-C converters/adapters. It is a 2014 MBP, with 2xThunderbolt 2 ports. I think the TB2 consideration will be 80% of the work. Like others said, any mouse/keyboard/monitor will do the trick, but you've got to figure out the connection type from the machine to the dock/hub, which can connect to endless peripherals/devices. LIke someone said, you can come in far under $1500, likely closer to $750 if you don't get premium keyboards/mouse. Say $350 for monitors (2x$175), $250 for dock, $150 for keyboard/mouse/cables.
