Finally got around to making the Utica Chicken Riggies discussed in here a few months back/last year/whatever. They were fantastic.
Not cutting meat out completely by any means. Just not making it a need for every meal like I have the last 30 years .

Roasted chicken legs Keller style, some of those bacon balsamic Brussels, and a spinach salad with dried fruit and goat cheese. It’ll appeal to a wide audience and is hard to fuck up. I’m fat with a child’s palette though so...
Depends on the season and the event. I have at least 1 dish for each of beef, pork, chicken that I can crush, a couple casseroles, and a few pasta dishes.
I made a corn chowder with leftover grilled corn from a few days ago. Little yellow potatoes, sautéed onions, milk, chicken stock, fresh herbs and cheese. It was pretty decent, parsley and chives on top. Nothing to write home about but the few people over seemed satisfied.
Didn't someone post a recipe for something like a mini quiche that is made in muffin tins? I can't find that.
not quiche, but I meal prep for the week with scrambled egg muffin cups. just whisked eggs, whatever meats/veggies/cheese you want and bake. great for a quick breakfast or snack before the gym.
this also seems obvious but cook the meat before you put it in the cup. bacon will still be raw by the time eggs are cooked.

Good deal. I found the lower model at Target a couple weeks back for $150. Picked it up for the wife for Christmas.
There are good attachments if you're into other shit. Meat grinding, sausage making, zoodles, pasta maker food processor. I realize you might already own a lot of these things but outside of a nice food processor the kitchen aid attachments are usually superior.
I pound my own meat (hur) or buy super cheap pre tenderized cutlets from the grocery store. Works with chicken well too. I like panko vs regular bread crumbs. Dry, dredge, egg, panko dry and fry Dredge has a lot of garlic salt and pepper. Sometimes a little cayenne. I only fry one at a time and rotate in the pan until golden and then flip Set on wire rack and start the next. It's money every time
I use mine about 5-6 times a year. None for baking. Wife uses it about the same amount of times for baking.
