I’m vegan and needed to do something to justify posting in this thread. I had also never smoked anything before and had no idea how much work it would be. Still, it was delicious and I enjoyed people’s reaction to it- fucks with your mind a bit.

Yah no one wants to hear the truth that falling off the bone isn't actually good. So I've learned to just leave it alone.
Falling off the bone is good. It’s just easier to do, so it’s disfavored in competitions. Like 99% of those you are serving aren’t KCBS judges or avid fans of BBQ competition shows.

Personal preference is one thing. I was just taking issue with “falling off the bone isn’t actually good…” Most BBQ is good.
Pulling off bone easily is good Falling off the bone like where you pick up a bone and only get a bone, is fucking terrible

Any recommendations on a good, solid smoker? I’m basically looking for the smoker equivalent of the Weber 22’ kettle grill- something well-designed, no frills and won’t break the bank.
Weber smokey mountain. Phenomenal smoker, very affordable and once you learn it very easy to use. billdozer chicken is done perfectly on one. Highly highly recommend. Edit - but you're vegan so the chicken recommendation doesn't matter. Either way it's amazing.

Alright, you all convinced me, I'm going to get the WSM. Now has anyone tried the Weber igrill temperature probe system or have another brand you can't live without? I probably only need a system with two probes max, won't be cooking more than that at once.
