Bought a boneless pork butt pack at Costco last weekend and my lord the way they cut the bome out is horrific. It's a big flopped piece of meat, not a solid block. I didn't have butcher twine to sew it back up so had to use a pan to hold it together. Overnight cook so I couldn't drain all the fat so half the butt was sitting in liquid. It turned out fine for pulled pork but I'll never do that again. 1:00 shows how flopped it is.
That's all they had. They had boneless and organic boneless. I was just cooking for my wife's church group.
I don't mind boneless but the boneless I've previously had was still a giant block of meat, not a fileted butt with half of it flopping around. I opened it up and was like wtf. I was putting it on at midnight too so i was annoyed and didn't have many options.
I buy butts at Fry’s (Kroger) when they have them on sale and throw them in the chest freezer. Last two I got were about $.50/lb. Big Costco stan but I’m not smoking a boneless butt.
I get my butts and ribs from this little country supermarket not too far from my house. They have a much better selection on that type of stuff than Publix.
The Sam’s meat selection is really good. Been a Costco shopper for years but got a membership from work for $20 this year. I will probably renew both next year.
Costco has more variety but the boneless is not ideal. Like it’s one of the only places I can get pork belly. Everything else is in costcos favor.
Sucks We get pork belly at HEB like it's going out of style If you want skin on things get a little more complicated, but I know several local meat markets I can get it
I don’t think I’ve ever purchased a boneless butt that did not look like it was in a car accident. Always go bone in now

If it works at Sam's it would work at Costco. I'll switch when they build one closer to me, but Sam's scan and go is nice
He'll our local sams has the deal by the door where it somehow scans you and your cart as you walk through so they don't even have to check your recept It only works about half the time, but it's still pretty impressive
Tri tip smoked to 133*, rested for 15 minutes and patted dry for searing with a torch. Sliced and served with a smoked baked potato (which honestly needed more time) and a Taylor Farms chopped Caeser salad.
Costco near me has from left to right. Entry door, exit door, corral of shopping carts. Everybody coming in with their shopping carts has to cross the stream of everyone coming out with their carts. I hate it.
My Costco just has a cashier at each self checkout register. it actually works out great because they are still faster than a normal line and the cashiers do a better job than John Q Public of scanning
nah this is my experience at every costco i’ve been to they don’t fuck around with theft sams couldn’t give two shits but i’ve never seen what was mentioned about something that scans your cart as you leave
Either way someone checks your cart when you’re leaving the store. With scan and go they are actually scanning a few items with a device to confirm you bought them. Never seen the automated ones. Around here at Sam’s or Costco, the people checking paper receipts vs carts are mostly performing security theater.
yeah i love scan and go and know they scan a few things as you leave but i’ll be honest there’s been a few times where i’ve checked the receipt and realized i didn't update the quantity on an item or missed something completely
Finally smoking some chicken thighs for the first time tomorrow, they have quickly become my favorite part of the chicken but I'm expecting the smoker to take them to a new level
Direct on the grate but you could really do all three and see what you like best. I like to let mine sit in sauce all day or 24 hours in fridge and then let them go low and slow adding sauce along the way. Usually throw them on direct heat to finish/crisp them up a bit. Not really sure you can fuck them up. Also definitely top 3 meal in our house.
Store usually has thighs in packs of 4 for like $4 or 16 for like $5 So buy the big package and experiment
My wife is usually like, why did you buy all these, its just us. Three days later when we finish them up she always says, wish we had more. It's also one of those superfoods that seem to taste better reheated.
I gotta find the recipe, and make them again. But did some smoked chicken thigh, then into the instant pot to make some really good tacos. Using Siete taco seasoning and enchilada sauce, tons of peppers.
We live on pan seared boneless/skinless thighs and roasted veggies. Keep them vacuum sealed and in the freezer at all times. Even cook them outside on occasion.
Ordered a slow n seer for my kettle that showed up today. Looking to put it to work this Sunday. Can’t wait.
