    I'm guessing euro is the traditional style so that - I guess. I want a kitchen knife, not work of art but I understand it's gonna take 200-300 to get a quality knife.

    I have a cheaper offset charcoal grill/smoker.

    Think I want to get this, for smaller/simpler stuff. Or maybe it would turn into my go-to smoker?

    Those guys hit a niche market around Austin and made it work by delivering their wood in lockable cabinets
    I learned about them several years ago seeing their cabinets outside one of the local places and researched them.

    I don't think their wood is anything special compared to what you can get yourself, they just figured out how to make it convenient to places that need a shit load of wood delivered weekly and have limited space to store it

    Yea, I think their biggest key to success is that they started basically a delivery service for wood
    Smaller trucks with little fork lifts on em that can load and unload their custom boxes of wood
    Almost like the little Debbie trucks that run daily convenience store routes

    While every firewood supplier around was running traditional model of you come get it or we charge you twice as much for delivery to their specific defined delivery area
    These guys nailed it for bbq restaurant market and are the only game doing it

    Now they are capitalizing on being the ones that supply wood to all the best joints around

    I was organizing my shed yesterday and came upon a half bag of briquettes from my Akorn days. I also have one of those little 15 dollar travel mini-kettles. My wife had requested a ribeye with chimichurri for dinner so I decided to fuck around with some charcoal for the first time in a long while. Nostalgia'd very hard while thinking about being a kid and watching my dad grill on his green Weber kettle, which was a regular Saturday event.

    Rescued this Kettle from a neighbor giving it away. Ordered some new parts. Going to break it down and clean it up. Then give it to my FIL.

    Right now just the One Touch Cleaning system. It was completely rusted. Replaced the handles already with some extra wood ones I had. The legs have a little wobble in them. Going to see if I can tighten them up. If not order new ones.

    Cut an apple tree down that was encroaching on our utilities (don't worry, got three more to keep the apple butter and cider game going). Used it to smoke some random shit.

    It all turned out well but my favorite was the sockeye. Brought the heat up from 225 to 400 when the ribs came off. Just four minutes but they got so much flavor.

    I got a 700 over a year ago and love it. Was going to get a 590 but someone told me pick a size you want and go one size up bc you would always regret not having the extra space. The 700 is perfect.

    I got the cold smoker attachment. It's nice to slowly thaw out meat if I didn't get it sat out early enough and for cold smoking salmon filets. Also use it as a warmer for briskets to rest them overnight after taking them off my offset.
