Sous Vide - we received a quarter beef in 2022 with a Rump Roast. Put it in the bath for 30-40 hours and it was fantastic for French Dips one weekend with people in town visiting.

Hard to follow up a poor paul plating masterpiece but oh well. Axis tenderloin with a carrot & ginger reduction. Brussels tossed in balsamic reduction with bacon & craisins. Smashed potatoes with garlic & Romano. Glad I finally jumped on the smashed potato fad, these will be a staple at our house moving forward.
Blackened haddock topped with a ginger, scallion, garlic paste. Marinated the veggies in soy sauce, fish sauce, apple cider vin, sherry vin, red pepper flakes, salt, and maple syrup.
Anyone ever made a recipe off of Momofuku website? Also anyone ever use the Momofuku noodles? Trying to come up with a couple quick recipes to execute for a friend getting back in town tomorrow night after being gone for 2 months and need to nail the dinner, for reasons.
their dried noodles are great and the seasoning packets are also good have not made a recipe off their site, mostly just wing it

Their noodles are so good. An easy lunch is that with some chili oil topped with a fried egg. Or if I have some leftover pork or something I’ll crisp that up in some sesame oil and throw some of that in the bowl too
Noodles + chili crisp + leftover protein (usually grilled chicken) + sliced scallions is some great ghetto ramen. David Chang is such a try hard chode though.
I've bought the noodles and their chili crunch. Chili crunch is fine but drier than I like it and I don't think its better than the staple of the Huy Fong/rooster chili garlic sauce.
I listen to his podcast religiously and he doesn’t come across that way at all to me. Especially now that he has kids. He will admit to being an asshole to work for when he was in the kitchen though
I was a big fan and then read Eat A Peach and was really was turned off to his whole schtick. Not to derail the thread any further
i appreciate that chang owns that he was a deranged lunatic for most of his life (and all the mental health and therapy that he's used to try to deal with it) and seems to be heavily into self auditing and openness pod is real good
From Momofuku’s recipes. The triple garlic chicken ramen. Took some liberties with the chili crunch noodles, added mesquite smoked pulled pork and some cukes. Pork and cabbage potstickers were a from the hip affair.
This may be a hot take but she annoys me on her own channel. I liked her a lot on BA. But her whole aesthetic on her channel comes off super forced to me.
