Do you know how to make your own tortillas? It’s a tortilla, refried beans, eggs, and salsa, so just make a tortilla and use your favorite beans and salsa, or google a recipe for the latter two if you wanna do it from scratch. Maybe add some queso fresco if you’re feeling super fancy. Can also use avo/guac, cilantro, whatever you feel like: go nuts. I like to sprinkle a little chili powder on the egg yolks and sub salsa verde in place of roja.
this is the dish, I could not pass that joke up but I am sure it’s absolutely great. I always laugh at the saying that you eat with your eyes and how it is misinterpreted. A dish should not always look picture perfect, it should make you want to eat it. This looks messy, this looks like a dish that you eat at home with some good wine and bread.
Anyone have a good chicken wing recipe? I’ve got sous vide, instant pot and air fryer. Basically just don’t have an outdoor grill/smoker.
Assuming you dont want to fry them...I've had great success w this. The only downside is having to plan ahead. Leaving them uncovered in the fridge makes all the difference. I also lighly rub them w a little bit of oil before baking. Also, 450 is a bit high in experience unless the wings are huge. Wife made some chickpeas with cumin, curry spice, and smoked paprika last night that may have been some of the best stuff I've ever eaten.
Roasted or some other prep? If roasted, you can throw some whole fennel seeds in there for a nice little pop
I don't think she roasted them; they were mostly a topper for eggplant on pita, but I was eating them straight out of the bowl until I got shoved out of the kitchen. I'll remember fennel for next time though!
I pan fried some chicken wings yesterday that we’re really good but made my house smell like a McDonalds key to crispness is to let them air dry in the fridge out of the packaging for a few hours and then give them a shake in some cornstarch. Good for frying or baking

Can’t say for certain that this would be my death row meal but it would certainly be on the short list. Sous vide Waygu strip with wine braised portabellos and baked potato.
levain - 500g bread flour - 500g water @ 80F - 1/8 tsp instant yeast mix to combine, cover, and let ferment for 12-14 hours at 65-70F bulk fermentation - measure 500g bread flour, 21g salt, 3g instant yeast and mix into large bowl - pour 250g water at 105F around sides of levain to release it from the bowl, and pour everything into the large bowl with dry ingredients - mix to combine by hand, making sure all flour is incorporated - keeping it covered in between, do 3 sets of stretch and folds every 20 minutes (1 total hour) - let rest for another 1-2 hours, dough should grow by 2.5x final ferment - gently release dough out onto floured countertop, and divide into two loaves - shape the loaves and place them in proofing baskets, and place into a large ziplock bag or garbage bag to keep sealed - place large dutch oven into oven and heat to 475F - let dough #1 proof for an hour, place dough #2 in the fridge after 40 minutes until it’s read to cook - after an hour, pour the dough out onto a parchment sheet that will fit in the dutch oven - take out dutch oven and carefully lower dough inside, cover with lid and place back into the oven for 30 minutes - remove lid and bake for 20-30 more minutes - let cool completely on cooling rack - repeat process with loaf #2
