Used to eat a curry zucchini soup in Charleston that I loved so much I had to make at home. Real easy. Cut up a small onion and maybe some garlic and saute in some butter or oil until browned to your liking. Add a few cut up zukes and saute some more. Stir in some curry powder (I usually add some garam masala too). Add one box of chicken broth and bring to a boil then simmer til zukes are tender. Turn off heat then blend with immersion blender and it's ready to eat. I usually add some cottage cheese for some lean protein and richness. Feta good too. Perfect warming winter dish and it's also great cold in the summer.
This is probably my most commonly made meal. the payoff to effort ratio is awesome and if you go easy on the toppings it’s really healthy. Also one of the most underrated benefits of making soup is if you work a lot and can’t cook as much as you’d like, you can cook once and eat for days.
I often add other veggies I have on hand too. Wanted to mention that the best one I ever made was when I added some pieces of guava with the zukes. The extra sweetness and aromatic aspect took it to another level.
Love a hearty crockpot stew or soup. Making a chicken and dumplings pot pie style stew here coming up.

Made a good one yesterday. Had an oven roasted chicken from Sunday, threw that in the crockpot with stuff yesterday to make broth. Cooked some onions garlic ginger celery carrots in some chicken fat, then added the broth, some mushrooms, and the cut up chicken. Amazing.
Went to the Mexican supermarket yesterday to purchase ingredients to make a.tramp's smoked pozole tomorrow. Somehow there were only 3 poblanos left, and they're in pretty rough shape, so I will have to procure a few more of those.
The internet has been buzzin with this recipe, putting significant strain on the supply lines. I’ll be making it this weekend but starting my search for tomatillos now.
