Did the green chicken "chili" this week and while I would debate calling it a chili it was addictive as hell. Tomatillos are just great in general anyway.
it is definitely a little on the soupy side, probably a lot of the water comes from the chicken. we have it on burritos, with rice, and it's amazing.

Rice cooks in a pot on the stove in literally 15 minutes, idk why you'd use the instapot, doesn't save any time really by the time it heats up and releases pressure
Fiance picked up a few peppers to plant in the garden this year. Now all we need are some chicken's to slaughter and we can make the chili verde with our own supply.

For me, it's control and lack of variance. I can duplicate the conditions that make perfect rice every time. PS I suck hard at making rice on stovetop. Sticky gelatinous mess every time.
Fiance made chicken chili verde again. Used boneless/skinless chicken thigh, and not as much oil... also added a fresh ghost pepper from the garden and ohhhhh boy.
Only used one, and removed the seeds, but it's still pretty damn hot. I like spicy, and it was a good amount of spice. Idk what else we'll use all these peppers in, lol.

We do meatball instead of sausage and mushroom risotto (like the recipe calls for). Probably eat this once every 2 weeks at the moment - put a little Parmesan cheese on there = *Yes I still drink milk with dinner like a 5 year old Spoiler
